This recipe happened on accident, and what a happy little accident it was. I had some oats I needed to use, but I don’t like oatmeal raisin cookies… I was also craving peanut butter and had a huge amount of peanuts that someone had picked out of some trail mix (hmmm…. I wonder who would do such a thing… my sweet, sweet daughter…) I started dumping things in the mixer and crossed my fingers. The result was absolutely delicious and has since become one of my most requested sweet treats.
Ranch Cookies
Ingredients
- 1 Cup Butter Softened
- 1 Cup Brown Sugar
- ¾ Cup Sugar
- 2 Eggs
- 2 tsp Vanilla
- ½ Cup Creamy Peanut Butter
- ¾ Cup Peanuts Roughly chopped
- 2 Cups Flour
- 1 tsp Salt
- 1 tsp Baking Soda
- 1 ½ Cups Oats
- 1 ½ Cups Chocolate Chips
Instructions
- Preheat oven to 350 °F
- In a stand mixer with a paddle attachment, cream butter and both sugars until light and fluffy. This could take up to 5 minutes.
- Reduce speed to low and add eggs one at a time, combining well after each addition. Add vanilla and peanut butter and mix well.
- In a medium bowl combine flour, salt, and baking soda. Slowly add the flour mixture to the stand mixer and mix until well combined. Add oats, chocolate chips, and peanuts and mix until just combined.
- Using a small cookie scoop or a teaspoon, drop the dough onto a parchment paper lined baking sheet about 2-3 inches apart. Bake for 15 minutes. Let sit on baking sheet for at least 5 minutes before transferring to cooling rack. Continue working in batches until all dough is baked.
