This simple, hearty breakfast is a great way to use up your eggs when you get a good collection of them going in the fridge. It is also a delicious way to clean out your fridge. Easy substitutions or add ins could include ham or bacon, zucchini, peppers, spinach, kale, and so much more.

This breakfast is a great one for a cast iron skillet so you can put it in the oven and crisp the top if you’d like. Also, save yourself time when crumbling your sausage and use the Mix ‘N Chop! A must have tool in every kitchen.
