This is a hearty, easy to throw together dinner with very simple ingredients, making it budget friendly. Basically it checks all the boxes, and that’s a big win for this mama!
Slow Cooker Hamburger Potato Casserole
Ingredients
- 2 Tbsp Olive Oil
- 1 Yellow Onion Diced
- 2 lbs Ground Beef
- 5 Small Potatoes
- 2 Cans Cream of Chicken Soup
- 1 Tbsp French Onion Dip Mix
- 1 tsp Seasoned Salt
- 1 Cup Milk
- 1 ½ Cups Shredded Cheddar Cheese
Instructions
- Heat oil over medium- high heat in a skillet. Add diced onions and sauté until translucent and soft. Add ground beef and brown thoroughly.
- While meat is browning, peel potatoes and slice into coins. Set aside.
- In a medium bowl, combine milk, soup, seasoned salt, and French onion dip mix utnil smooth.
- Once beef is cooked through, spray your slow cooker with nonstick spray. Layer half of the potatoes on the bottom of the slow cooker, then half of the beef, then half of the soup mixture, than half of the cheese. Repeat with remaining ingredients, with the top layer being cheese.
- Place lid on the slow cooker and cook on high for 4 hours, or until the potatoes are fork tender.
- Once your casserole is cooked, turn slow cooker off and let sit for 10-15 minutes so the casserole can thicken. Serve warm and enjoy!
