Soup has always been and will always be one of my favorite meals to make as well as one of my favorite meals to eat. It’s just a soul warming, smile inducing event, and since I live in the rainy and grey Pacific Northwest, I’m always down for a warm bowl of comfort during the fall and winter. I don’t keep secrets when it comes to dinner time, so I’m here today to share my top 5 soup recipes!

Hearty Corn Chowder

I love a good chowder, but I am not a fan of clams. Enter the corn chowder! I used to work in a concession stand at an equestrian arena, and “Grandma”, the mom of the owners, used to make a big huge pot of corn chowder to sell in the winter months. It was so good, that I usually had a list of people reserving their cup of soup before it even arrived at the arena.

She was one of those old school cooks who didn’t have a recipe, and sadly she passed, so I had to work on my own recipe. It is so very close to Grandma’s soup it almost makes me feel like I’m back at the concession stand.

Farmhouse Chili

Chili is one of those things that, in my opinion, people overcomplicate. It doesn’t have to be hard, I promise! A few simple ingredients, add the beans or don’t if you have a husband like mine, top with some cheese and sour cream, add a corn muffin, and there is dinner! Also I’ll let you in on a little secret… leftover chili is best used to make a chili omelet for breakfast. I know it sounds weird, but just give it a try.

Pressure Cooker Potato Soup

Of all the soups, potato soup is my all time favorite. I have a couple of recipes for potato soup, but this pressure cooker version is fast and doesn’t lack any flavor at all. It is delicious topped with some shredded cheese and some crispy bacon. Oh and don’t forget the crackers!

Nona’s Homemade Noodles

Ok, this recipe comes straight from my own Nona (grandma) who got it from her mom, my Great-Grandma Flo. The memories that flood over me when I make this for my own daughters are strong, and they love these noodles as much as I do. I always thought they were too much work, so imagine my surprise the first time I made them and they didn’t take any longer than any other weeknight dinner.

Nona’s noodles will for sure fill you up and warm your soul on a cold day.

Creamy Chicken and Rice Soup

This simple soup recipe happened one night when Ada was sick. I wanted to make something simple that I thought she would eat, but also be easy on her tummy. I also wasn’t running to the store with a sick kiddo, so I had to rummage through the pantry and see what I had. It turned out delicious, which left me scrambling trying to remember what I did so I could write it down! I got it all on paper and have made several times since on a chilly evening.

There you have it- a week of my favorite soups! Get those Dutch Ovens (or pressure cookers) out and happy soup season my friends!
