Sausage Tortellini Soup
Ingredients
- 1 lb Ground Italian Sausage
- 1 Yellow Onion Diced
- 3 Cloves Garlic Minced
- 3 Tbsp Flour
- 1 Tbsp Italian Seasoning
- 1 Cup Heavy Cream
- 5 Cups Chicken Broth
- 1 Cup Spinach Chopped
- 2 Cups Tortellini Frozen or refrigerated
- Salt and Pepper To taste
Instructions
- Cook sausage and onion in Dutch oven over medium high heat, while crumbling sausage. If you purchased links, be sure to remove casings first. Once onions are soft and sausage is cooked through, about 8-10 minutes, drain grease and add garlic. Cook for 1 more minute.
- Add flour to sausage, mix to combine, and cook for 1-2 minutes. Add Italian Seasoning and stir to combine.
- Add chicken broth to Dutch oven and use a wooden spoon or silicone spatula to deglaze the bottom of the pot. Slowly stir in heavy cream. Bring to a boil and lower heat to a simmer.
- Add spinach and tortellini and simmer about 5 minutes, or until tortellini is cooked though and tender. Salt and pepper to taste.
- Serve hot and enjoy!
