Slow Cooker Smoked Sausage and Potatoes

This is one of those “throw it all in the pot” and walk away dinners, made even better by the fact that it is done in the slow cooker and you don’t have to stir it unless you want to. My kids came back for seconds and my husband packed the leftovers for lunch the next day, which means it needs to be on the regular rotation around here.

This will be a bit soup like right at first, however if you let it sit for 10-15 minutes before serving it will thicken up. I won’t tell anyone if you eat it like soup though!

Slow Cooker Smoked Sausage and Potatoes

Ingredients
  

  • 14 oz Smoked Sausage or Keilbasa
  • 1 Onion Diced
  • 4 Large Russet Potatoes Peeled and cut to bite size pieces
  • 1 Can Cream of Chicken Soup
  • ½ Cup Sour Cream
  • 1 tsp Garlic Powder
  • 1 ½ Cup Shredded Cheddar Cheese
  • Salt and Pepper to taste

Instructions
 

  • Add potatoes, sausage, onion, and cheese to a greased slow cooker.
  • In a separate bowl, combine cream of chicken, sour cream, salt, pepper, and garlic powder. Pour of potatoes and sausage in slow cooker.
  • Cook on low 6-8 hours or high 4 hours. It is ready when your potatoes have cooked through. Top with some extra cheese (optional) and enjoy!
