This is one I make solely for my husband. It’s one of his favorite things, and let’s be honest… the man eats way more chicken than he cares to with a smile on his face, so once in a while I throw something in the rotation as a thank you.
Chicken Fried Steak with Cream Gravy
Ingredients
For Steaks
- 2 Cube Steaks
- 1 Cup Flour
- 1 tsp Baking Powder
- ½ tsp Baking Soda
- ½ tsp Black Pepper
- ½ tsp Salt
- Dash Cayenne Pepper A little goes a long way here- start small
- 1 Cup Milk
- 1 Egg
- Oil for frying
For Gravy
- 3 Tbsp Butter or pan drippings with oil
- ¼ Cup Flour
- 3 Cup Milk
- Salt and pepper To taste
- Dash Cayenne Pepper
Instructions
For Steaks
- Heat oil in deep skillet over medium heat.
- In shallow bowl or plate, place flour, baking powder, baking soda, salt, pepper, and cayenne pepper. Mix together.
- In a second shallow bowl, combine milk and egg.
- Dredge steaks through flour mixture, egg mixture, and back to flour mixture. Make sure flour covers entire steak so that none of the egg mixture is showing through.
- Place steaks in pre-heated oil and fry on each side until golden brown. 3-5 minutes per side. Remove cooked steaks from oil and set aside.
For Gravy
- In same pan used for frying steaks adjust oil to 2-3 Tbsp, or remove oil all together, leaving some drippings and add butter and melt. Note- you only need to add butter if you remove all of the oil.
- To melted butter or oil, add flour and whisk to combine. Cook for 1 minute, then slowly, while whisking, add milk. Season with salt, pepper, and cayenne pepper to taste. Continue to whisk until gravy is almost boiling and thickened. Use to top steaks, and enjoy!
