Taco Rice Casserole

A simple casserole that is sure to please the whole family! This casserole also makes an amazing freezer meal. To freeze simply cover with foil before baking and place in freezer. Once ready to use, thaw overnight in the fridge. Bake at 350* for 45 minutes, covered with foil. After 45 minutes, remove foil and bake 10 minutes longer.

Ingredients
  

  • 1 lb Ground Beef
  • ½ Onion Diced
  • 1 Cup Corn
  • 1 Can Rotel
  • 1 pkg Taco seasoning
  • 2 Cups Cooked White Rice
  • 1 Cup Shredded Cheddar Cheese

Instructions
 

  • In a large skillet over medium heat, brown ground beef while breaking up. Add in onions and continue cooking until onions are soft.
  • Stir in taco seasoning. Add corn and rotel. Stir to combine.
  • Spray 9×13 baking dish and scoop rice into the bottom of the baking dish. Spread evenly across the bottom. Spread meat mixture over rice, and top with shredded cheese.
  • Bake at 350 °F for 25 minutes, or until heated through.
