Chicken Broccoli Casserole

Ingredients
  

  • 2 Tbsp Olive Oil
  • 3-4 Chicken Breasts cut into bite sized pieces
  • Salt and Pepper to taste
  • 1 Onion Diced
  • 3 Cloves Garlic Minced
  • 2 Cups Broccoli
  • 1 Can Cream of Chicken Soup
  • 1 Cup Mayonaise
  • 1 Tbsp Curry Powder
  • 2 Cups Shredded Cheddar Cheese
  • 1 Sleeve Ritz Crackers crushed

Instructions
 

  • Heat oil in skillet over medium heat until shimmering. Add chicken and onion, salt and pepper and sauté until chicken is almost cooked through, 5-7 minutes. Add garlic and cook 1 minute more.
  • Trim and cut broccoli to bite size pieces. Steam until desired tenderness. Don't over cook- it will continue cooking in oven.
  • Mix chicken mixture, broccoli, soup, curry powder, and mayo in a large bowl. Spread into a 9×13 baking dish and sprinkle cheese on top. Bake at 350 °F for 10 minutes. Remove from oven, and sprinkle crushed crackers over the top. Place back in oven and bake 5 minutes longer, or until top is golden and bubble
