Chicken Broccoli Casserole
Ingredients
- 2 Tbsp Olive Oil
- 3-4 Chicken Breasts cut into bite sized pieces
- Salt and Pepper to taste
- 1 Onion Diced
- 3 Cloves Garlic Minced
- 2 Cups Broccoli
- 1 Can Cream of Chicken Soup
- 1 Cup Mayonaise
- 1 Tbsp Curry Powder
- 2 Cups Shredded Cheddar Cheese
- 1 Sleeve Ritz Crackers crushed
Instructions
- Heat oil in skillet over medium heat until shimmering. Add chicken and onion, salt and pepper and sauté until chicken is almost cooked through, 5-7 minutes. Add garlic and cook 1 minute more.
- Trim and cut broccoli to bite size pieces. Steam until desired tenderness. Don't over cook- it will continue cooking in oven.
- Mix chicken mixture, broccoli, soup, curry powder, and mayo in a large bowl. Spread into a 9×13 baking dish and sprinkle cheese on top. Bake at 350 °F for 10 minutes. Remove from oven, and sprinkle crushed crackers over the top. Place back in oven and bake 5 minutes longer, or until top is golden and bubble
