Air Fryer Breakfast Pockets

This is a go-to breakfast for us and one that can be stored and reheated throughout the week when you are busy! The instructions are written for the Pampered Chef Air Fryer, so you may have to adjust for your brand of air fryer.

Air Fryer Breakfast Pockets

Ingredients
  

  • 4 Slices Bacon Diced
  • 4 Eggs
  • ¼ Cup Milk
  • ¼ Cup Shredded Cheddar Cheese
  • 1 Box Puff Pastry Sheets thawed
  • Salt and pepper to taste

Instructions
 

  • In a medium bowl whisk together eggs, milk, salt, and pepper. Set aside
  • in a medium skillet over medium heat, fry bacon until crisp. Once finished, remove all but 2 tablespoons of bacon grease from skilled. Pour egg mixture into skillet with bacon and cook while stirring to break up eggs until eggs are set and cooked through. Remove from heat and add cheese. Mix to combine.
  • Roll thawed puff pastry out on your counter flat, and cut each sheet into 6 squares. Evenly distribute egg and bacon filling onto half of the squares. Brush edges with water and lay other squares on top. Roll the edges of the puff pastry squares together to form a seam.
  • Place on air fryer trays and cook on the Air Fry setting for 15 minutes, flipping the pockets over for the last 5 minutes of cooking.
