Ground Cherry & Berry Cobbler

I grew ground cherries for the first time this year. They were very productive, and I ate so many of them fresh, but I couldn’t eat that many of them. This left me looking for ways to use them and a cobbler was the perfect way! Top this cobbler with Homemade Ice Cream, and you won’t be disappointed.

Ingredients
  

  • 2 Cups Ground Cherries Husked and Cleaned
  • 1 Cup Blueberries Frozen or fresh
  • 1 Cup Strawberries Frozen or fresh
  • 1 Tbsp Lemon Juice
  • 1 Egg
  • 1 Cup Flour
  • 1 Cup Granulated Sugar
  • 2 Tbsp Brown Sugar
  • ½ tsp Cinnamon
  • 10 Tbsp Butter Softened and Divided

Instructions
 

  • Preheat oven to 375 °F
  • Use 4 Tbsp of butter to grease a 10 inch cast iron skillet. Heavily grease bottom and halfway up the sides. Set aside.
  • Pour both berries and the ground cherries into the bottom of the skillet. Stir to mix and then sprinkle with the lemon juice.
  • In a separate bowl, use a fork to mix together egg, granulated sugar, and flour until mixture resembles a sand like texture. Sprinkle this crumb mixture over the berries and ground cherries.
  • Mix cinnamon and brown sugar together and sprinkle over the top of the crumb mixture.
  • Melt remaining 6 tbsp of butter and pour over the top of the ingredients in the skillet. Bake for 35 minutes. Let cool 10 minutes and serve with fresh whipped cream or vanilla ice cream!
