There are many variations of is recipe floating around, but this is the way we do it here on the Huskisson Homestead. This casserole also makes an amazing freezer meal!

Amish Breakfast Casserole

Course Breakfast

Ingredients
  

  • 1 lb Cooked Bacon OR Sausage Diced
  • 1 Onion Diced
  • 1 Red or Green Bell Pepper Chopped
  • 6 Eggs Beaten
  • 4 Cup Hashbrowns
  • 1 ½ Cup Cottage Cheese
  • 2 Cup Shredded Cheddar Cheese
  • 1 ¼ Cup Shredded Swiss or Gruyere Cheese

Instructions
 

  • To enhance flavor, saute onion and pepper in an oiled skillet. (Optional)
  • In large bowl, combine hashbrowns, eggs, meat, and all cheese. Add in onion and pepper. Mix well.
  • Pour into a 9×13 baking dish and bake at 350 °F for 35-40 minutes or until set and bubbly. Let stand 10 minutes before serving.
