These muffins are the perfect on the go breakfast. They also freeze really well making them one of my go-to staples in the freezer for school mornings. Add 1/2 cup of shredded cheese to make them McGriddle Muffins!
Pancake Muffins
Ingredients
- 1 ½ Cup Flour
- 3 ½ tsp Baking Powder
- 1 tsp Salt
- 1 Tbsp Sugar
- 1 ¼ Cup Milk
- 1 Egg
- 3 Tbsp Melted Butter
- ½ lb Cooked Breakfast Sausage Crumbled
- ½ Cup Maple Syrup
Instructions
- Combine dry ingredients. Make a well in the center and add wet ingredients except for syrup. Fold in Sausage and syrup.
- Pre-heat oven to 400 °F and line a muffin tin with liners or spray with cooking spray.
- Fill muffin liners ¾ full and bake for 15-18 minutes, or until golden brown.
