Who doesn’t love a good chimichanga?! I will admit, the fried version is absolutely delicious, but if you are looking to have a tasty Mexican feast that’s a little on the lighter side, this is for you.
Air Fryer Chicken Chimichangas
Ingredients
- 2 Cups Chicken cooked and shredded
- 1 Cup Salsa
- 1 tsp Cumin
- 2 tsp Taco Seasoning
- 1 Cup Shredded Cheddar Cheese
- 6 Flour Tortillas
- 2 Tbsp Melted Butter
- Diced tomato, sour cream, guacamole, olives, etc for topping
Instructions
- In a large bowl, combine chicken, salsa, cumin, taco seasoning, and cheese. Divide mixture evenly between tortillas, placing the mixture in the middle of the tortilla.
- Fold sides of tortilla into the middle, and roll up from the bottom, making a "burrito". Place seam side down on your air fryer trays.
- Brush melted butter on top of each chimichanga with a pastry brush.
- Using "Air Fry" setting, cook for 12-15 minutes, or until tops of chimichangas are crisp.
- Top with your favorite toppings and enjoy!
