Who doesn’t love a good chimichanga?! I will admit, the fried version is absolutely delicious, but if you are looking to have a tasty Mexican feast that’s a little on the lighter side, this is for you.

Air Fryer Chicken Chimichangas

Course Main Course

Ingredients
  

  • 2 Cups Chicken cooked and shredded
  • 1 Cup Salsa
  • 1 tsp Cumin
  • 2 tsp Taco Seasoning
  • 1 Cup Shredded Cheddar Cheese
  • 6 Flour Tortillas
  • 2 Tbsp Melted Butter
  • Diced tomato, sour cream, guacamole, olives, etc for topping

Instructions
 

  • In a large bowl, combine chicken, salsa, cumin, taco seasoning, and cheese. Divide mixture evenly between tortillas, placing the mixture in the middle of the tortilla.
  • Fold sides of tortilla into the middle, and roll up from the bottom, making a "burrito". Place seam side down on your air fryer trays.
  • Brush melted butter on top of each chimichanga with a pastry brush.
  • Using "Air Fry" setting, cook for 12-15 minutes, or until tops of chimichangas are crisp.
  • Top with your favorite toppings and enjoy!
