Foil packet dinners, or “hobo dinners” are one of my favorite things. They are simple and easy to adjust to your families likes, clean up is a breeze, and you can toss in whatever you have in your produce drawer that needs used up!
Chicken Hobo Dinner
Ingredients
- Foil
- 2-4 Large Chicken Breasts
- 2 Russet Potatoes
- 2 Carrots
- 1 Tbsp Seasoned Salt
- 1 Tbsp Italian Seasoning
- ½ Onion
- 4 Cloves Garlic
- Olive Oil
Instructions
- Preheat oven to 425 °F
- Trim chicken breasts and remove any fat. Place each piece of chicken on a foil square. I cut each of my 2 chicken breasts in half, making 4 total dinners.
- Drizzle a small amount of olive oil on each chicken breast and sprinkle seasoned salt evenly over each piece of chicken.
- Wash and slice potatoes into half inch thick coins. Divide evenly among foil squares on top of chicken. Peel and cut carrots into spears. Divide evenly among foil squares with potatoes. Slice onion and do the same. Slice and repeat with garlic.
- Drizzle a small amount of olive oil over vegetables and top with Italian seasoning.
- Fold sides of foil up, making a packet and place each packet on a baking sheet. Bake for 45 minutes, or until veggies are soft and chicken is cooked to 165 °F

This meal also works well grilled outside or over a camp fire!
