Pressure Cooker Potato Soup

This soup is so easy to throw together, and isn’t lacking in flavor. The star of the show is the French Onion Dip Mix. This yummy potato soup recipe is written for the Pampered Chef Deluxe Multi Cooker, can be easily adjusted for whichever pressure cooker you would like to use.
Skip canned cream of chicken and use my homemade version instead!

Pressure Cooker Potato Soup

Ingredients
  

  • 4 Large Potaoes Peeled and sliced thick into coin shapes
  • 32 oz Chicken Broth
  • 2 cans Cream of Chicken Soup
  • 8 oz Cream Cheese cubed
  • 3 Tbsp French Onion Dip Mix
  • Salt and Pepper to taste
  • 6 slices Bacon cooked and crumbled for topping
  • Shredded cheese optional for topping
  • Diced green onions optional for topping

Instructions
 

  • Add sliced potatoes, broth, and cream of chicken soup to pressure cooker pot. Lock lid. Select custom setting, high pressure for 12 minutes.
  • Natural release for 5 minutes, then manually release, or "quick release" remaining pressure. Remove lid and break up potatoes with Pampered Chef Mix 'n Chop. Add remaining ingredients and replace lid.
  • With lid locked, select custom setting for 4 minutes on high pressure. Do quick release and mix ingredients together, stirring until cream cheese is fully incorporated.
  • Top with bacon, shredded cheese, green onions, etc.
