I love potatoes, but scalloped potatoes may be one of my favorites! They are surprisingly easy to make and just a handful of pantry staples you probably already have at home.

Ingredients

  • 4-5 Cups Thinly Sliced Potatoes
  • 3 Tbs Butter
  • 3 Tbs Flour
  • 1 ½ Cup Milk
  • 1 tsp Salt
  • 1 Dash Cayenne Pepper
  • 1 ½ Cup Grated Cheese Divided- I use a mix of medium and sharp cheddar

Instructions

  • In a small sauce pan over medium heat, melt butter. Blend in flour and cook for 1 minute. Add milk and whisk to combine. Season with salt and cayenne pepper. Lower heat and cook until smooth and bubbly. Add in 1 cup of cheese and stir together, allowing the cheese to fully melt. Turn off heat.
  • Place half of the potatoes in a greased baking dish. Pour half of the cheese mixture over potatoes. Repeat with remaining potatoes and cheese, making 2 layers.
  • Sprinkle with remaining cheese and bake at 350 °F for 1- 1½ hours, until browned and bubbly and potatoes are fork tender.
