Nona's Homemade Noodles

I got this recipe in a recipe book my grandma, or “Nona”, put together for me when I got married. It is full of recipes from my family and friends and is definitely one of my favorite wedding gifts. This recipe is a family favorite from my mom’s family. Nona makes it for special occasions, and I didn’t know until she gave me the hand written recipe card that it originally came from her mom, my Grandma Flo. My eyes may have gotten a little misty seeing that. I had a special little bond with Grandma Flo and miss her terribly.

We always just called this Noodles. Be prepared when you make Nona’s Noodles… this recipe makes a lot! Grandma Flo and Nona both had large families to feed, so it makes sense. I usually half it when I make it for my family, and we still end up with leftovers. Enjoy!

Nona’s Homemade Noodles

Ingredients
  

  • 4 Chicken Breasts
  • 3 qts Chicken Broth
  • 7 ½ Cups Flour
  • 2 ½ tsp Salt
  • 5 Eggs with water to make 2 ¼ cup total
  • 3 Tbsp Olive Oil
  • 1 Carrot, shredded optional

Instructions
 

  • In a large Dutch oven, cook chicken breasts in broth until tender and cooked through. Slightly cool in broth, then remove to dice or shred. Set aside.
  • In large bowl, add flour and salt. Make a well in the center and pour egg and water mixture into well. Pour oil on top of and stir a little to blend eggs, then start mixing into the flour mixture until too stiff to stir. Pour out onto a well floured surface and knead for 5 minutes.
  • Roll dough out into a large rectangle about ¼ inch thick. Roll dough into a "jelly roll" and cut into ¼ inch wide strips.
  • Bring broth back to a boil in Dutch oven. Once boiling, drop noodles and carrot into pot and reduce heat to medium. Add chicken back in and cook until noodles are cooked through- about 8-10 minutes depending on thickness. Season to taste- I like to add salt, pepper, and a small amount of garlic powder.
