These simple corn bread muffins are the perfect addition to your soup or chili night!

Corn Bread Muffins

Course Side Dish

Ingredients
  

  • ¾ Cup Yellow Cornmeal
  • Cup Flour
  • 1 Tbsp Baking Powder
  • ½ Cup Sugar
  • 1 tsp Salt
  • 2 Eggs
  • 2 Tbsp Honey
  • ¾ Cup Milk
  • ½ Cup Butter Melted and cooled

Instructions
 

  • Pre-heat oven to 350 °F
  • Spray your muffin pan or fill with muffin liners.
  • In a large bowl, whisk together cornmeal. flour, baking powder, sugar, and salt. In a separate bowl, break up eggs with whisk. Add honey, and then milk, whisking after each addition. Add milk mixture and butter to cornmeal mixture. Stir until blended. *Do NOT overmix*
  • Spoon mixture into muffin tin to ¾ full. Bake for 17-20 minutes, or until golden brown.
