These simple corn bread muffins are the perfect addition to your soup or chili night!
Corn Bread Muffins
Ingredients
- ¾ Cup Yellow Cornmeal
- 1¼ Cup Flour
- 1 Tbsp Baking Powder
- ½ Cup Sugar
- 1 tsp Salt
- 2 Eggs
- 2 Tbsp Honey
- ¾ Cup Milk
- ½ Cup Butter Melted and cooled
Instructions
- Pre-heat oven to 350 °F
- Spray your muffin pan or fill with muffin liners.
- In a large bowl, whisk together cornmeal. flour, baking powder, sugar, and salt. In a separate bowl, break up eggs with whisk. Add honey, and then milk, whisking after each addition. Add milk mixture and butter to cornmeal mixture. Stir until blended. *Do NOT overmix*
- Spoon mixture into muffin tin to ¾ full. Bake for 17-20 minutes, or until golden brown.
