This is one of my favorite dinners. It was the first thing I ever cooked for my husband when we were dating and I kind of think it’s what won him over haha! It is so simple, yet packed with flavor. I usually cook min in the RockCrok Everyday Pan or the Enameled Cast Iron Skillet because both go from stove top to oven and therefore we have less dishes to clean up. Win-win!
Taco Casserole
Ingredients
- 1 lb Ground Beef
- 1 Cup Salsa
- ½ Cup Mayonaise
- 2 tsp Chili Powder
- 2 Cups Crushed Tortilla Chips
- 2 Cups Shredded Cheese of Choice We use Colby jack or cheddar
Optional Toppings
- Shredded Lettuce
- Tomato
- Olives
- Diced Onions
Instructions
- Brown hamburger over medium heat. Drain and add salsa, mayo, and chili powder. Mix well.
- Pour meat mixture into medium ungreased baking dish. Top meat mixture with chips, then top chips with shredded cheese.
- Bake, uncovered for 20-25 minutes, or until golden and bubble at 350 °F
- Before serving, top with desired toppings.
