The simple, yet delicious Breakfast Biscuits have quickly become a household favorite around here! We are usually on the go, even on the weekends, so having something everyone can grab and head out the door with is a huge plus. An even bigger plus? They freeze really well, so I can make a batch up and toss them in the freezer for school and work mornings. No excuse to stop at the drive through around here!
This recipe was written for the Deluxe Air Fryer , but can easily be adapted to work in any air fryer or even the oven.
Air Fryer Breakfast Biscuits
Ingredients
For the Biscuits
- 3 ½ Cups Flour
- 1 Tbsp Baking Powder
- 1 tsp Salt
- 2 Tbsp Sugar
- ½ Cup Cold Butter cubed
- 1 ½ Cup Buttermilk
For the Filling
- 6 Eggs
- ¼ Cup Milk
- 8 Strips Bacon Cooked, and diced
- ½ Cup Shredded Cheddar Cheese
- Salt and Pepper to Taste
Instructions
Biscuits
- Mix flour, baking powder, salt, and sugar together in a large bowl. Cut in cold butter with a pastry blender until mixture is course and and has pea sized chunks.
- Add buttermilk a little at a time to make a heavy, wet dough. Knead the dough lightly, about 6 times, to combine. DO NOT OVERMIX.
- Pat the dough out on a lightly floured surface until about 1 inch thick. Use a ring cutter, or a floured glass to cut into circles. Set aside and work on your filling.
Filling
- In medium sized bowl, beat eggs, milk, salt, and pepper together. Pour mixture into skillet on medium heat and cook through, stirring frequently to scramble.
- In a separate bowl, mix together cooked eggs, bacon, and cheese.
The Finishing Touch
- Take one biscuit circle and flatten to about half the thickness of the original. Scoop a heaping tablespoon of filling mixture into the center of the flattened biscuit.
- Fold the edges of the biscuit into the center so that the filling is completely closed into the biscuit dough. Pinch the seem together.Do the same with the remaining biscuits until all are filled.
- Place biscuit on air fryer trays. Make sure they aren't touching each other.
- Cook on Air Fry setting for 13-15 minutes or until golden brown. Be sure to rotate trays half way through cooking.
Notes
If your biscuit dough is a little on the thicker side, the bottoms of your breakfast biscuits may not cook through. Just flip them over and cook on Air Fry an additional 2-3 minutes.
