I live in the Pacific Northwest and we are kind of known for our apples around here, so any chance to make a tasty apple treat I am there! These cookies have the perfect amount of crunch and chew, with just the right amount of sweet. The cinnamon undertone makes this cookie a yummy fall infused dessert.
Caramel Apple Cookies
Makes 4-5 dozen depending on cookie size.
Ingredients
- 2 ¼ Cups Flour
- 1 tsp Baking Soda
- 1 Cup Butter softened
- ¾ Cup Sugar
- ¾ Cup Brown Sugar
- 1 tsp Vanilla
- 2 Eggs
- 1 Medium Apple Diced small
- 1 11 oz Package Caramel Baking Bits
- 2 tsp Cinnamon
Instructions
- Pre-heat oven to 375 °F
- In small bowl, mix together flour, baking soda, cinnamon, and salt.
- In separate medium bowl, cream together both sugars, butter, and vanilla. Add eggs one at a time, mixing well after each egg. Gradually add in dry ingredients, mixing as you add. Stir in apples and caramel bits.
- Drop by rounded teaspoon onto greased baking sheet, leaving room for cookies to spread. Bake for 10-12 minutes. Remove from oven, and let cookies cool a good amount before removing to cooling rack. The caramel bits will melt during baking and you need to give them a chance to firm back up before moving the cookies.
